Pumpkin Log

Church Ladies Fave :)

Batter:
3 Eggs
1 C Sugar
2/3 C Canned Pumpkin
1 tsp Baking Soda
1 Pinch Cinnamon
3/4 C Flour
Chopped Nuts ~ Optional

Filling:
2TBS MArgerine
8 oz Cream Cheese
3/4 tsp Vanilla
1 C Confectioners Sugar

Preheat oven to 350*
Grease 10x15 cookie sheet, line with wax paper and then grease over paper.
spread Batter on greased paper / pan and sprinkle with nuts if desired.
Bake 15 minutes and turn out on a flat towel, then sprinkle with Confectioners sugar.
Roll lengthwise with towel and let cool.
When cool, unroll and remove paper.
Spread with filling and re-roll.
Keep refridgerated.
